Cattle and Beef
About our beef
Here at Hidden Acres Farm, we take beef seriously. Our cattle are born, bred and raised right here on the farm. We do not use steroids, growth hormones or antibiotics for added weight gain. Our cattle are raised on pasture and grain for flavor and marbling. We strive to raise beef that we would be proud to serve to our family and yours.
We are both certified master cattlemen. Our beef is USDA certified and carries the Kentucky Proud label.
We sell by the whole, half or quarter cow and by the individual package. We also have several beef bundle deals available. All beef is for local pick up only.
USDA Beef Grades
From the USDA website:
The USDA grade shields are highly regarded as symbols of high-quality American beef. Quality grades are widely used as a “language” within the beef industry, making business transactions easier and providing a vital link to support rural America.
Prime Beef
Prime beef is produced from young, well-fed beef cattle. It has slightly abundant marbling (the amount of fat interspersed with lean meat), and is generally sold in upscale restaurants.
Choice Beef
Choice beef is high quality, but has less marbling than Prime. It has at least a Small amount of marbling.
Select Beef
Select beef is very uniform in quality and normally leaner than the higher grades. It is fairly tender, but because it has less marbling, it may lack some of the juiciness and flavor of the higher grades. It has at least a Slight amount of marbling.
Standard and Commercial
Standard and Commercial grades of beef are frequently sold as ungraded or as store brand meat.
Did you know?
New York Strip
Did you know that New York Strip steaks are from the same cut as T-bone? It's the center portion without the bone. So if you like NY Strip but T-bone is on sale, simply cut out the center portion and cook like you would a NY Strip steak.
